Cross the chain of bridges leading to Cedar Key and you’ll find one of the quietest spots in the Sunshine State.

"You won't find Starbucks here or anything like that, and we are trying to keep it that way," said Daniel Smith from Cedar Key Paddling.

Here, taking it slow on the water is the attraction.

Smith had a dream -- start a kayak business where he could share his backyard.

"It's paradise out here,” he said. “Only if you like baby dolphins and manatees and stuff like that."

Cedar Key Paddling puts folks on the water with only one rule -- watch the tide.

Fais:  "What happens if they get stuck in the wrong area?
Smith: "They get to start their own 'Survivor' show for a little while."
Fais: "Could that happen to us this afternoon?
Smith:  "I have not lost anybody yet, and I will not start with you, either."

Folks can venture out on their own or with a guide.

Rentals are done by the day and not the hour, so there is time to enjoy the water and the many islands.

"We have over 100 islands spread out over here," Smith said.

And with the island hopping, Daniel knows you may need to get picked up in a spot other than where you launched.  Therefore, he has seven pick-up spots around the island.

"That is why I have seven different launch sites all around the island, so it doesn't matter what the tide is doing, what the wind's doing," Smith said.

Cedar Key Paddling also offers canoes that can hold up to 800 pounds, so you can pack a cooler and enjoy lunch.
