And when we went to their Tampa location on Boy Scout Road, they were raring to serve the Tuna, served seared and rare, over a cold noodle salad.

The Asian inspirations come with the crushed peanuts and peanut sauce, as well as the salty and sweet ponzu sauce.

Executive Chef Ben Bowman’s advice for making tuna at home?

Make sure it’s sushi grade fish because you’ll be eating it very rare!

Sesame Chive Crust
1 pound Sesame Seed, Black
1 pound Sesame Seed, White
½ pound chives, fine chopped
 
Place all ingredients in a mixing bowl and stir to combine.
 
Cold Sesame Noodles
1 ounce Peanut Sauce (recipe follows)
2 ounces Spaghetti Noodles, Cooked
¼ ounce Honey Roasted Peanuts, Crushed
¼ ounce Scallions, 1/8 inch Bias Cut
½ ounce Cucumber, skin on, 5 in. long, Julienne Cut
 
Combine all the ingredients together thoroughly in a mixing bowl.
 
Sesame Chive Crusted Tuna
 6 ounces Tuna Steak
½ teaspoon Salt & White Pepper Mix
2 teaspoons Sesame Chive Crust
2 teaspoons Vegetable Oil
4 ounces Cold Sesame Noodles
2 Fresh Cilantro Sprigs
2 tablespoons Ponzu Sauce (recipe follows)
 
Season pre-portioned fish with salt and white pepper mix on both sides.
Dredge tuna portion in sesame and chive crust coating surface.
Add oil to the griddle and sear tuna. Sear the tuna on the first side to a rare temp then flip a quarter turn and sear the remaining sides the same way.
Once tuna is seared and removed from griddle, slice tuna into event slices on cutting board approximately ¼ inch thick and shingle each slice slightly on each other.
Top the noodle salad with the sliced and shingled tuna.
Drizzle the ponzu sauce over and around the tuna.
Garnish the tuna with cilantro sprigs and serve.  
 
Peanut Sauce
½ cup Tamari, Soy Sauce
4 tablespoons Rice Wine Vinegar
2 tablespoons Sesame Oil
2 ounces Light Brown Sugar
2 teaspoons Fresh Minced Ginger
¾ cup Cold Water
½ teaspoon Crushed Red Pepper
½ cup Roasted Peanut Butter
 
Place all ingredients in a mixer and puree until the dressing comes together and has creamy texture.

Ponzu
1 ½ cups Tamari Low Sodium Soy Sauce
1 ½ cups Honey
2 ounces Minced Ginger
3 tablespoons Minced Garlic
2 cups Minced Green Onion
3 tablespoons White Sesame Seeds
½ cup Rice Wine Vinegar
½ teaspoon Crushed Red Pepper
1 Orange, Zest

Place all ingredients except the orange in a mixing bowl and whisk until combined.
Zest the orange into the sauce and whisk to combine.
