The Boneless Short Rib Ropa Vieja served at Maestro's was inspired by "On Your Feet," the Broadway show inspired by the music of Gloria Estefan that will take the stage at the Straz in Tampa starting Tuesday, Oct 24.

Executive Chef Edward Steinhoff gave a preview of the Latin dish in the Chef's Kitchen.

Boneless Short Rib Ropa Vieja


  • 3 lbs. boneless short ribs
  • ½ cup olive oil
  • 1 large onion (julienne cut)
  • 1 red bell pepper (julienne cut)
  • 1 green bell pepper (julienne cut)
  • 24 oz. diced tomatoes
  • 2 Tbsp. red wine vinegar
  • 2 bay leaves
  • 1 Tbsp. cumin
  • ½ bunch fresh cilantro rough chopped
  • 1 cup sliced Spanish olives
  • 3 cups beef stock
  • Salt and pepper to taste


  1. Prepare boneless short rib by seasoning well on all sides with salt and pepper

  2. Meanwhile, heat half the olive oil in a deep pan and sear rib until golden brown on all sides

  3. Remove rib and add remaining olive oil

  4. Add peppers, onions, bay leaves and garlic and sauté on high heat for 5 minutes

  5. Add tomatoes, beef stock, cumin, cilantro, olives and vinegar

  6. Stir well and allow to boil

  7. Reduce heat to very low and add short rib

  8. Liquid should just cover the meat
