“One of my good friends in Ireland is the one who got me started in sugar-craft teaching, and ever since then, I've wanted to have my own place and continue trying all manners of baking," McEllin said, laughing as she continued mixing chocolate into a perfect decadent concoction for mason jar molten lava cakes.

Along with McEllin's enviable baking skills, she's also led quite an enviable life. Starting her baking journey in the kitchen with her Italian grandmother as a young child, she grew up to travel and teach baking around the globe.

After decades of crafting and honing her skills, most notably in Ireland, it all led to her next grand venture: Opening her very own academy of baking in Satellite Beach.

McEllin and her husband opened the Florida Academy of Baking just after the shutdowns took place early in 2020. She said it was a daunting leap of faith, but one that paid off.

Business has been booming for McEllin ever since the shutdowns lifted. She, along with a host of other talented bakers and chefs, offer classes year round, and over the holidays, they put an extra-festive sprinkle of holiday goodness on the classes.

They host specialty classes in which you can learn to make festive holiday treats for just about any holiday. They made Thanksgiving macaroons, and throughout December, they had a number of Christmas-themed baking classes.

Florida Academy of Baking has a host of different classes, and right now, they still have several holiday baking classes for which you can register. For more information, visit the Academy's website
