DAYTONA BEACH, Fla. — Drunken pasta by the beach?

Sam’s Coal Fired Pizza at  817 E. International Speedway Blvd. is a brand new joint practically underneath the “World’s Most Famous Beach” sign.

Sam Tadros — a.k.a. “The Pizza Don” — used to be in business of selling frozen pizzas.

“The Rock, Dwayne Johnson, used to order pizzas from us,” Tadros said. “Then one day, I got 10 cases of Teremana Tequila saying, ‘Thank you’. And that’s when we found out it was The Rock.”

Johnson is the founder of Teremana Tequila.

So at Sam’s new location, he thought it’d be fitting to make a dish utilizing the tequila. It’s similar to a more traditional vodka sauce, but with a whole new edge.

Tequila Pasta with Fresh Housemade Burrata

Ingredients

  • 1 pound Fusilli pasta in salt water
  • 2 cups marina sauce
  • Chopped shallot
  • 2 cloves chopped garlic, sweated with 1/4 teaspoons of olive oil
  • 1/2 cup tomato paste
  • 1 teaspoon Calabrian chili paste
  • 8 tablespoons Teremana Tequila
  • 6 ounces heavy cream
  • 2 tablespoons butter
  • Parmesan cheese
  • Fresh basil

Directions

  1. Boil 1 pound of fusilli pasta in salt water.
  2. Combine the chopped shallot and 2 cloves of garlic.
  3. Sweat down for 5 minutes, add 1/2 cup of tomato paste, and let it caramelize.
  4. Add a teaspoon of Calabrian chili paste and 8 tablespoons of Teremana Tequila, and cook off the alcohol.
  5. Add heavy cream.
  6. Stir in the marinara sauce.
  7. Add some pasta water, butter, Parmesan cheese to taste and fresh basil to sauce.
  8. Finish off with fresh burrata
