So you've got steak and potatoes, filet mignon with asparagus, or a burger and beer during the game. Sure, that's all awesome, but let's shock your 'buds, my friends.

How about a tri-tip seeping with rosemary and garlic, enhanced with flavors of molasses-based BBQ, garlic aioli, toasted sourdough and pico de gallo?

Rock & Brews in Oviedo revealed its Santa Maria Tri-Tip Sandwich recipe. KISS front men Gene Simmons and Paul Stanley celebrated the restaurant's grand opening earlier this month. They couldn't talk more highly about this nosh.

"If I wouldn't eat it, why should you?!" Stanley said with a laugh during our recent interview. "I really make sure that everything is top flight. The food here could be on fancy China in another restaurant where you'd wear a suit and tie. But this isn't about that."

So what is tri-tip anyway?

"The tri-tip is the bottom sirloin, which is in the hind quarters," explained area director Scott Paul, describing it as "lean and flavorful," and popular in Central California.

A cool tip he gave to us is how to cut the meat.

"The way that you always look at that is like a river," he explained, showing how to cut with the grain of the meat. "See, the river's going this way? You always want to go across the river."

That'll get you the tenderness you're going for.

Santa Maria Tri Tip - Rock & Brews

Step 1:

Dry Rub
Equal parts-
Black Pepper
Kosher Salt
Paprika
Garlic Salt
Dried Rosemary
Rub loin and let it marinate over night

Step 2:

Baste and grill
Place tri tip on heated and oiled grill and cook 5 to 7 minutes on each side. Baste twice each side.
Basting Marinade-
Vegetable Oil
Red Wine Vinegar
Mustard

Step 3:

After grilling let the loin rest and then slice against the grain for a tender cut. To build the sandwich start with your favorite roll and lightly toast. Add baby lettuce and a touch of your barbeque sauce. Pile the sandwich high with tri tip (roughly 5 to 6 ounces). Top with fresh Pico de Gallo: Mixture of tomatoes, minced yellow onion, fresh garlic, lemon juice, salt, cilantro and your favorite hot peppers.
