You’re right! Though Professor Binns usually teaches History of Magic, his lecture to Hogwarts visitors in Harry Potter and the Forbidden Journey is scheduled in the Defense Against the Dark Arts room. The ghost of the long-dead Binns, himself, is never seen on the ride or in the queue.
